Menu (2 weeks in a row. BOOM-BABY!)

Monday - Tangy Pork Chops (recipe Below)

Tuesday - Taco Salad made with this homemade seasoning, and black beans (I will let you know if we like it)

Wednesday - Pancakes and eggs and bacon

Thursday - Beans and Rice burritos

Friday - Cheeseburger Soup

Saturday - Baked mac and cheese

Tangy Pork Chops


6 bone-in pork loin chops (approx. 7 oz)
2 tsp Olive Oil
2 Celery ribs finely chopped
1 Small onion Finely chopped
1 TBS Butter
1/2 Cup Ketchup
1/4 Cup Water
2 TBS Cider Vinegar
1 TBS Brown Sugar
1 TBS Lemon Juice
1 TBS Worcestershire Sauce
1/4 tsp Salt
1/8 tsp Pepper
1 Small Onion thinly Sliced
1 Large green pepper cut into rings

In a large non stick skillet coated with cooking spray brown chops and oil in batches. Transfer to a 13x9 baking dish coated with cooking spray. In same skillet saute celery and chopped onion in butter til tender. Stir in ketchup, water, Vinegar, brown sugar, lemon juice, W. sauce, salt, and pepper. Bring to boil, reduce heat, cover and simmer for 15 to 20 minutes or until slightly reduced. Pour sauce over chops, top with slice onion and pepper rings cover and bake at 350 degrees for 20 to 25 minutes or until meat thermometer reaches 160 degrees.
